What the Kids from South Park Order at Mexican Restaurants

Loves a good sizzling Fajita
Like the ones where it’s served to the customer while it’s still steaming.
He likes to eat that with rice and a tortilla
And he gets super annoyed when people oggle over his food and ask him for some especially when they first bring it out.

Saw birria tacos on TikTok once and never stopped ordering them since
But before then he ordered a burrito of any kind.
Then gets guacamole as an appetizer
One time he got so hungry he ate a burrito that had piping hot queso cheese drizzled on top of it with his bare hands like a regular burrito and everyone just sat there in awe.

He’d get what Kenny wants to have (the taco burrito and enchilada combo) with a side of kids meal french fries to substitute the usual rice and beans.
It’s funny to him because he knows how much Kenny would love to have the meal but can’t afford it. He gets a delicious meal and a laugh.

Hmmm I think my boy will be having a burrito bowl with chicken. Plenty of avocados and corn and lettuce. No tomatoes.
Either that or three shrimp tacos.
Whatever he orders he splits with Kenny. Like if he orders a bowl, half of it goes to Kenny. If he orders the tacos, he’ll have one, Kenny’ll have one, and they both split the third.

Okay so he only gets one of two things
He either gets carne asada with rice and beans, or he gets pollo loco (chicken and queso on a bed of rice. AKA the SouthieParkie Meal)
If he’s feeling extra boujie he’ll get a spicy pepper soup for an appetizer.
He also gets sopapillas after every meal.

Also enjoys fried ice cream! It freaks him out though because he has absolutely no idea how they fry it but it stays. Ice creamy? Yk??

Boiled Chicken (Crackfic)

A nice summer day. What better way to spend it than a nice cookout?
The sun was shining down on the woods through an opening, as pans of food were set on the table. One containing a set of kabobs, another containing enchiladas. A bowl of rice was set next to the enchiladas. Pita bread was set next to the kabobs. A pitcher of iced tea was in the middle of all the food, with cups off to the side.
Though it was a very small gathering- especially since it was already past one hundred degrees outside, everyone present was having a good time. Mainly gossip was being passed around the table.
EJ took a bite out of the kabob he was holding, savoring the taste of it. BEN took a bite of the enchilada on his plate, enjoying the warmth of the food. Fresh and hot. Given it had been his first time cooking something from home. Jeff took a sip of the iced tea in his red Solo cup.
“Has anyone seen Tim and Brian?” Toby asked. “I doubt they’re coming. They’re too busy for anything fun anyways.” Jeff replied, chuckling afterwards. It was true, the two older proxies were usually too busy for anything fun. Especially when it came to gatherings. That didn’t matter though, gatherings were more fun without them- at least to some people.
Just then, the two older proxies walked up to the table with a container and set it down. “What’s this?” Jeff asked. Neither Brian nor Tim cooked much. What did they bring to the table?
“We decided that this time, we would contribute to the food at this summer’s cookout!” Brian replied, a smile on his face.
Everyone at the table felt a shiver go down their spines.
“Contribute… to… the food…?” Toby asked. Brian nodded and lifted the tinfoil that was on the tray.
The moment the foil was lifted, all hell broke loose.
“Dear God… what is this white bullshit you call food?!” EJ exclaimed.
“I can still hear the chicken clucking! Oh- the horror!” Jeff cried, turning away from the food.
BEN felt himself get a headache just from the sight of what was in the tray. “Is that fucking ranch dressing?! On boiled chicken?!” He asked.
“Okay, so maybe the food isn’t your thing. That doesn’t mean it’s not good though.” Tim remarked. “Good? Good?! You’ve gotta be shitting me! That looks straight up inedible!” Toby shouted, pointing at the tray like it was from hell. (It might as well have been tbf.)
“You’ve gotta be joking right? Surely, this isn’t the actual food you made and you’re just fucking with us- right?!” BEN asked, having an almost panicky tone to his voice.
“No…? This is the food we made!”
Everyone at the table felt like they would begin crying. This felt like a cruel prank.
“…You’re lying. You’re fucking lying.” Jeff stated. This just had to be a cruel joke. It just had to be! There was no way Tim and Brian would subject them to eating this… sad attempt at food.
“It’s not a joke, Jeff.” Tim said.
“…And that was our worst fear.”

The highlight of my week was eating racks of BBQ Ribs... followed by meatballs... and Chicken Enchiladas... I probably should not of... but I did.
And don't forget about the deli meats and cheeses - lordy - you'd think I had guests to entertain with my charcuterie game.
And of course the week after I declare that I want to finish my Year of Wellness strong - I get in a snacky mood.
I will need to buckle down a bit more with my meals and portions.

Had some enjoyment reading - read a slew of Digital Comics and been burning through a hardcover book. Feels were that I made that distinction - "hardcover" book - but hey, I had to go all the way to local library for it.

With the end in sight - I am getting incredibly snacky... thus hurting my resolution to "finish the year strong".
The Ugly:
This Quest for Sleep feels Never Ending and making a little... cranky.

Smoky Chicken & Chorizo Enchiladas
Instructions
Pre-heat oven to 175C/350°F Grease an 8″ square or an oval baking dish.
Mix the cooked chicken and chopped chorizo sausage together, and then set aside.
Empty the salsa into a large mixing bowl, add the water (if using), garlic powder, chipotle chilli powder, salt, and pepper to taste. Mix well. Adjust seasonings if necessary.
Pour 1/4 of the salsa mixture over the base of the greased baking dish and then layer 1/4 of the flour tortilla strips over the top. Scatter some of the chopped olives and sweet corn over and then add some of the chopped chicken and chorizo. Top with more salsa and continue to layer in this pattern, until the last layer. For the last layer, spoon the sour cream over the top before finishing with the salsa mixture and then scatter the grated/shredded cheese over the top. (Can be frozen at this stage, cover and freeze for up to 2 months.).
Cover the casserole with aluminium foil and bake for 35 minutes; take the foil off and finish baking for 5 to 10 minutes longer or until the topping is bubbling and the cheese is melted and golden.
Serve immediately with sour cream, jalapeño peppers and chopped cilantro or parsley. I find that a green salad is the perfect accompaniment to this, but rice would also be good.
To cook from the freezer: Thaw the casserole in the fridge for 24 hours before removing for 30 minutes, before baking as instructed before.

2 cups chopped cooked chicken 6 inches hot chorizo sausage, cut into chunks 2 cups mild salsa 1⁄2 cup water (optional) 1⁄2 teaspoon garlic powder 2 teaspoons dried chipotle powder (more or less to personal taste) salt and pepper 15 ounces corn kernels, drained (600g) 1⁄4 cup pimento stuffed green olive, halved 1 cup sour cream (8 ozs) 6 flour tortillas, cut into strips (8-inch) 2 cups grated cheese, to taste sour cream, to serve chopped jalapeno pepper, to serve cilantro or parsley, chopped, to serve

it's 3 4 a.m. and I'm hungry and we're perpetually (very) poor so bc I can't help it here is a list of some foods I dearly desperately miss:
- COFFEE.
- almost every fast food. just, hot multi-ingredient satisfying meals acquired in under 10 minutes that require no prep, cooking, or cleanup (quality can vary drastically ofc but idgaf at this point)
- more specifically: giant fucking cheeseburgers, hot and juicy, fully dressed. Taco Bell. and Chinese food. And good pizza that doesn't come from dollar store freezers. And biiig thicc sandwiches from subway or similar
- boneless garlic parmesan chicken wings
- Arby's. Roast beef, curly fries.
- French fries in general
- Zaxby's/Panera salads
- only had it a couple times but chipotle/qdoba burritos or bowls
- restaurants. haven't been out to eat since before the pandemic but just, big complicated filling meals cooked by someone else
- more specifically: warm rolls with honey butter, chicken tenders and fries, enchiladas, chicken fried steak, a good hearty chili, fettuccini alfredo with broccoli and chicken, lasagna, fully loaded potato soup, loaded nachos, a good baked spaghetti and meatballs ...
- fried pickles
- homemade comfort food, like, a full "Sunday dinner" spread. Meatloaf, or pot roast with veggies, mashed potatoes and gravy, baked mac n cheese, sweet cornbread, green beans with bacon, deviled eggs, a giant deluxe salad...
- SALADS. BIG FRESH CRISP SALADS WITH ALL THE TOPPINGS AND VARIETY
- a full breakfast spread. hash browns, pancakes, lots of eggs with onions and peppers, juice, sausages, biscuits and gravy, etc
- orange juice
- a wholeass veggie or fruit tray. mostly the carrots, or cantaloupe/strawberries/apples but give me the whole tray and leave me alone
- my "safe" foods
- banana nut bread 😭
- from-scratch home baked goods, more than just the $1-box-cake-and-$1-frosting every few months. All The Bars, All The Cookies, pies, the decadent brownies
- fucking. CHOCOLATE.
- snacks in general. Just, having them, and the ability to grab a handful between meals if needed or desired
- the delicious but "expensive" (>$5) grocery shit we can't splurge on. there's this amazing cranberry almond chicken salad...

- polish sausage fried with peppers and onions and sauerkraut

Wellness Wednesday:
All the Way May
May flew by and I had an absolute blast.
Been loving the warm weather, outdoor time, barbecuing, traveling, and... just everything in general - This month has been real good to me.
Things to note this month:
Had a massive yard renovation - love being outside now (well more than usual)
Guardians of the Galaxy - Great viewing experience
Got to visit family I haven't seen in a while
Got to partake in the Hot Ones Challenge - the whole experience was a hoot

I hit my First Weight Loss Plateau.
Hitting that Weight Loss Plateau was at first... a bummer (especially after my last post where I stated "I Feel Unstoppable")... but... I was very aware it was coming down the pipe at some point / some time - I am actually amazed that I made it almost half a year with continual weight loss.
Also - I gained 1.4 pounds - nothing detrimental - and not to be gross, but that overage can essentially be cured with one bathroom break.... Oh boy... I just realized mid sentence that this is probably coming of weird like I might have bulimia... No, no, no... I am talking about taking a healthy dump.
Anywhosel...
I have no intentions of changing my current diet or workout plan unless to increase enjoyment.
Overall, May was just a real chill month - I've never been this relaxed. Hoping June and July follow suit - Looking for more good things to come.

LOW CARB ENCHILADA MEATBALLS INGREDIENTS Meatballs: 1 lb ground beef 1 egg 1/4 cup real grated cheddar cheese 2 Tbsp taco seasoning 1/2 tsp onion powder 1/2 tsp salt 1/4 tsp black pepper 1/4 cup enchilada sauce (3 gm sugar or less) DIRECTIONS: Meatballs: 1) Preheat oven to 400. 2) Add all of the meatball ingredients into a large bowl and mix well until combined. 3) Shape into approximately 15 meatballs and place on a baking sheet lined with aluminum foil. 4) Bake for 25 minutes or until cooked through. Put together Casserole: 1) Preheat oven to 350. 2) Pour 1/4 cup enchilada sauce into bottom of small baking dish or cast iron skillet. 3) Place cooked meatballs into dish and top with remaining enchilada sauce. Top with shredded cheese. 4) Bake for 15 minutes or until cheese is melted and bubbly. Which should be… 5% carbs 20% protein 75% fat Carb manager is a great app to track macros Carbs are a limit – try not to go over your carb limit. Fat is a lever – you don’t have to meet your fat macro, it’s simply there to help you get full. Protein is a goal- try your best to reach your protein goal, but try not to go over. Excessive amounts of protein can cause you to stall in weight loss. Anything other than this food group selection would be considered low carb. Vegetables: No potatoes! Get your carbs from above ground veggies!!! • Leafy greens- Spinach, Spring mix, Kale, Romaine • Zucchini- Great for a noodle substitute! • Avacado- Awesome source of natural fat! • Eggplant • Brussels sprouts • Tomato • Spaghetti Squash- Versatile, makes a great spaghetti substitute and is even great for making hash browns!! • Cucumber • Peppers- Jalepeño, banana, green/red/yellow/ orange bell • Broccoli- Great with cheese, steamed or just raw! • Asparagus- Awesome roasted or sautéed with bacon and garlic! • Cauliflower- AWESOME potato substitute!! • Celery- Great with cream cheese or all natural peanut butter! • Cabbage • Pickles (Read nutrition labels, watch for sugar and carbs) • Olives • Green beans- Awesome sautéed in bacon grease with garlic, (watch portion size, though). • Onions- Red, yellow: use somewhat sparingly, to taste Fruits: Most are a no-no, especially bananas, oranges and grapes. • Strawberries • Blueberries • Raspberries • Blackberries • Lemon/Limes- Adds great flavor! Can be used as breading, nacho substitute or even sprinkled with cinnamon & stevia and eaten like cereal with Almond milk and tastes like cinnamon toast crunch!)
