I do really like the idea of dragons having a compulsion to hoard things, not necessarily treasure but SOMETHING (and sometimes it can be a pretty random kind of item) but hm, what about Sorrel... He doesn't exhibit a lot of personality traits associated with hoarding...
I think that he's been accused by other dragons of hoarding bed partners, which, fair claim honestly lol there's been many, but while he's extra fond of the people he's been with he's not possessive of them in any way, they can do whatever they want.
I think his true hoard is rare weapons - maybe specifically swords? He has a particular favourite sword that he always brings for quests and loves to show off, talk about etc but he'll also loot cool ones off fallen enemies etc.
Like every proper dragon Sorrel has a lair - his is located in some abandoned fort ruins in a remote forest that he's claimed as his own and protects with magic, both to avoid people stumbling upon it by accident and to alert him if someone does find it. He's not going to just attack someone for stumbling into his lair, but it IS going to stress him out until he can confront the intruders and find out why they're there. If they were just curious or needed a place to set up camp there's no problem.
But yes - he stores his swords in his lair, probably disguised to look like a pile of sticks or something. I think he's very chill about his hoard because he's confident it's very well protected, so it's not a subject that comes up much. He's picky with his swords too so it's not a huge hoard, he won't hoard every rusty shortsword he finds. Quality over quantity!
Beyond that, Sorrel does not spend much time in his lair, it's mostly a storage area that he pays a visit maybe once every few years.
If you really, really need a good sword, have shown that you can handle/take care of one and ask very nicely he'll probably let you have one from his hoard, but he'll be internally crying the entire time.
