Keto Tomato Soup

This keto tomato soup is a soup that will make you crave for more. Best served during cold-weather.
 Servings: 4
 Ingredients:
·       1 can tomato paste
·       1 cup heavy whipping cream
·       ¾ cup shredded Asiago cheese
·       ¼ cup water
·       1 teaspoon oregano
·       1 teaspoon minced garlic
·       Salt and pepper to taste
Procedure:
1.       Place your tomato paste, minced onion, and garlic into a pot. Turn on the heat to medium and pour in your cream.
2.       Bring to a boil while you whisk the mixture together.
3.       Once it’s boiling, add in your Asiago cheese little by little. It should start thickening up.
4.       Add in the water and cook for an additional 4-5 minutes.
5.       Serve and top with pepper. You can optimally add some green onions too.

I was super movtivated when I came home from work- it was cold, there was Christmas music going in my car and it felt like a chowder kind of day. So, I tried my hand at a keto clam chowder! I used turnips instead of potatoes, which had the same texture exactly but a bit too strong a bite; and sour cream instead of flour. Everything else was essentially the same. Dang people this was heaven in my mouth!!! Next time I might use cauliflower as. A potato sun instead.

Guys I made a freaking masterpiece today It was my first time ever making Lobster Bisque and it wasn't easy but it came out amazing I mashed a few recipes together and added my own secret ingredient 😉 and it's low carb and high fat Lobster Bisque is my favorite soup so I'm sooo happy it came out yummy

Crock-Pot keto chicken soup
Prep time: 45 minutes. Cook time: 6 hours. Total time: 6 hr 45 min
Servings: 8
Ingredients
2 lb Chicken Thighs
1/2 Tbsp Salt
1/4 tsp Pepper
2 tbsp Fresh Thyme
2 Cloves Garlic (I like to use the jarred pre minced garlic found in the produce section of most grocery stores, about 1 tsp if you go that route)
5 Cups Chicken broth
1 lb Carrots (sliced in half lengthwise and cut into 1/4" slices)
1 Yellow Onion
1/2 Bunch Kale (chopped into bite sized pieces, about 4 cups packed)
1/2 Tbsp Thyme
Salt to taste
Directions
Place the chicken thighs in the base of a crock pot. Sprinkle the salt and pepper over the chicken.
Place the sprigs and minced garlic on top of the chicken.
Pour the water(or chicken broth) into the crock pot. Add the chicken base, if using.
Cook the chicken on high for 4 hours.
After 4 hours the chicken should be "fall off the bone" tender.
Remove the chicken from the crock pot and place in a bowl.
Remove the thyme and discard. At this point, if you desire, you can strain the broth in the crock pot through a fine mesh sieve(if you want a broth free from any debris left from the chicken).
Add the broth back to the crock pot after straining.
Turn heat back to high.
Separate the chicken from the bones.
Lightly shred the chicken. Discard any cartilage.
Add the bones back to the soup and cover and refrigerate the chicken.
Add the carrots, onions, and chopped thyme to the broth and cook on high for 2 hours.
In the last 1/2 hour of cooking, add the kale to the soup.
After 2 hours the carrots should be soft and tender, along with the kale.
Remove the bones from the soup and discard.
Check the seasonings and add more saltor pepper as necessary.
Add the chicken to the soup and allow to reheat for about 10 minutes. Do not stir too much or the chicken will become over-shredded.
