Spiced Carrot Dip Toast w/ Local Microgreens This was lunch and, honestly, I could relive the simple goodness daily. The roasted carrots with cumin and coriander have tremendous flavor that keeps on giving! 1/2 of the carrots were made into dip while the other 1/2 were saved for salads/bowls. Spiced Roasted Carrot Dip In case you wanted the recipe for this bright orange dream! Below is based on eyeballs and estimates since you know I'm the freestyle cooking queen of Queens! Don't fear food and tasting it as you go along! Cooking is an experience, a beautiful, sometimes messy and heart filled experience! Spread this spread and the joy of real food! Sardine Salad For One Delighting in the gift of a good meal and breeze on the fire escape. Reminded of my trip to Italy where I'd often eat outside, alone, and upon entering the restaurant when I requested a table for one a waiter would often shout SOLA! Sardine Salad For SOLA is playing on a loop in my mind. The canned sardine, hate me for it - I care not - it makes a fantastic dinner a top fresh greens with perfectly plump cucumbers, spicy radishes, soft salty olives and crisp red onions. Dressed with fresh lemon juice, extra virgin olive oil, salt and pepper - it's so incredibly perfect in this moment. Tomorrow night I have a dinner guest, so I've been saving my 3 foot squash to share and enjoy with my little Gaaabbbbbaaaagooooollll @gabriellegug and I cannot wait. Prosecco, squash and pasta on the fire escape await. Eating simple is always best. Grandma would be very proud. And sshhh. It'll only take 25 minutes to make. If I prepped the squash ahead, a mere reheat and pasta boil. Cooking fresh can be simple. A little thought, a little shopping, to make a little space to begin cooking. It's what I'm here to share. Tuesday Lunch: Veggie Bonanza Sundays crippling headache left me with veggie left to prep and so prep I did - on a Tuesday. The lunch table is set for my guest @xo.helenguzman Today's meal will be eaten app and snackable style, thinking outside of traditional meals and one note dishes so there's lots to enjoy and lots for me to play with all week long! Simple is best. 1. Tray of roasted veggies 2. Bulgarian feta 3. Cucumber and tomato salad 4. Rice Salad with sweet potato, yellow split pease, red onions and dried cranberries tossed with a homemade turmeric dressing 5. Red lentil dip (center) with cilantro and pan sautéed tomatoes 6. Sliced Farmers Market radishes for crunch and dipping (I couldn't resist locking them up) Will likely throw in an avocado. Toasts will be made upon arrival. Meal Prep Didn’t Happen, But A 15 Minute Dinner Did A headache crushed my plans today. Beach to kitchen, or so I thought. So, what does one hungry woman do when this happens? The headache was and is passing but I still didn’t feel like doing a cook. Instead, I grabbed all of the freshness from my fridge and freestyled a salad. A bowl. A bowl of simple, nourishing goodness. Components included: 1. Italian Tuna in Extra Virgin Olive Oil *no need for tuna as this salad easily stands on its own with flavor - and if you're #vegan or #vegetarian and need another pop/some heft - sprinkle with lentils or cannellini beans - they won't disappoint 2. Celery Leaves 3. Jalapeno 4. Tomato 5. Red Onion 6. Olives 7. Radishes 8. Radish Greens *DO NOT toss your radish or beet greens, ever! They are a pesto, sauté or salad waiting to happen! 9. Pan Fried Zucchini *prepared on the fly 10. Parsley Pesto *prepared on the fly With 15 minutes of chopping and a toss of some ingredients in the food processor, dinner was on the table in no time tonight.
