Foraged Dandelion & Violet Jelly
Ophelia and I made this a couple weeks ago so I thought I would share my recipe. This was such a fun thing to do for me as an adult and she loved it. If you do have children this is such an enriching activity for them and a great way to teach them about the world around them.
Did you know that dandelion jelly, jams, and syrups were called “the poor peoples honey” here in Appalachia (and other places) around the Great Depression? My mom said my great grandmother looked forward to making this every year because of that! And it sure does taste like honey!
So my recipe is as follows:
Like two cups of the yellow parts of the dandelions and a handful give or take of violets.
If you leave any green on the dandelions, your jelly may come out bitter
Roughly 2 cups of water, ideally you want a cup of water per every cup of flowers.
Boil the flowers for 3-5 minutes, the longer the better honestly but you don’t want to scald them.
Sift the boiled mixture through a strainer or cheese cloth (if you had a child helper like me you may want to do this several times) be sure to squeeze any moisture out of the flowers as the dandelions will hold moisture and you’ll loose a lot of the your water if you don’t. Keep the liquid and toss the flowers.
Put back onto heat
Add 2 generous drops of vanilla extract
1 table spoon of lemon juice (you can do freeze squeeze or bottled it’ll get the same result either way)
When you add the lemon juice watch the color change! Note: all dandelion jelly will be more yellow in color , the handful of violets make a pretty pinky orange.
3 tablespoons of pectin (I used surejel brand)
Note: you could skip this step and leave out the pectin and achieve or more syrup texture to fit your needs.
1 1/2 - 2 cups sugar
I actually did closer to 2 1/4th cups myself, I prefer my things on the sweeter side so do what makes your heart happy.
While adding each ingredient in be sure to stir frequently, bring your mixture back up to a boil and let it boil for another 3-5 minutes.
Remove from heat and pour into jars. Note: how you will jar this will depend on what kind of jar you are using I.e canning jar or just a regular jam/jelly jar.
Let cool on your counter to thicken and then enjoy.
Once cooled these should be refrigerated.
This recipe should yield 4, 4oz jars approximately. However you could cut the recipe depending on however many flowers you are able to find.
You can use this recipe with only dandelions, violets or most edible flowers and berries.
PLEASE forage responsibly and leave plenty for the bees in your area, dandelions are first good source for bees. Also be wary of any area that may be treated with pesticides.

Morel season! Dandelion syrup! Lots of spring updates!
Found our first morel mushroom hiking up in our back-forest; going back for more this Friday! Also found some cool edible ones called Dryads Saddle, but turns out we got them after they were way too big.
If you have an abundance of dandelions flowering near you (not near a road or runoff/polluted area) you may be interested in making some Dandelion syrup with it- it tastes a little like honey~ 🍯
Our apple tree is also blooming! Scraggly but strong. Looking forward to some pies and apple butter and maybe cider this fall.
Have you heard of iNaturalist? It's a pretty neat app to help identify all the cool plants coming out of the ground and also some of the critters. Give it a try! It's always cool to learn something new. :)

Hiiii!
I'm making dandelion syrup today and I thought I could share the recipe with y'all.
You're gonna need:
Enough dandelions to fill a 1l* jar (and really pack them in there, try to fit in as many as possible)**
1l of water
1kg of sugar
juice of 2 lemons
*1l = around 33oz
** Pls be careful where you pick them, you wouldn't want them to be covered in some nasty chemicals, right?
1. Collect your dandelions. I heard you can use stems too but it gives the syrup that kinda bitter taste so I don't use them.
Tumblr media
Try to pick flowers in full bloom.
Tumblr media
I like to pick them to that cute little bag cause ✨ cottagecore vibes ✨
2. Spread you dandelions somewhere for around 3hrs*** so ants and other little creatures can leave.
Tumblr media
*** I spent that time collecting cherry blossom to make cherry blossom infused honey 😌🍯
3. Boil flowers for 20min in that 1l of water
Tumblr media
4. Let it cool off and leave it in the fridge for 24hrs.
5. After 24hrs bring it to boil again.
Tumblr media
6. Let it cool off and separate the flowers. Then squeeze out every last drop of your future syrup out of them (I wrap them in a clean piece of fabric and just squeeeeeze).
Tumblr media
After this you can throw out the flowers.
7. Add sugar and lemon juice.
8. Let it boil until it has the consistency you like. Stir often during this step.
(After 1-2hrs your syrup should be more runny, after 2-3 hrs it should be thicker. Of course, if you care about health benefits, it'd be better to boil it for a shorter time. Be careful to not boil it for too long cause it might harden!)
9. Pour your still hot syrup into jars and close them.
Tumblr media
This recipe usually makes 4-5 little jars but I spilled like ⅓ sooo I only have 3 this time.
Have fun!

For vegans, dandelion syrup makes an excellent homemade honey substitute. To prevent the syrup from tasting bitter, only use the yellow portions of the dandelion blossoms.

did you end up trying the dandelion jam that didn’t seal? to me dandelion tastes like honey but a little to the left and it messes w my brain
it really does taste like honey! i thought it was just like, the sugar. like it tasted like sugar and that's why people said it tasted like honey. but even halving the sugar... this tastes like honey. i shouldn't be surprised because probably what they actually both taste like is pollen. bees know what's up.
however. i should have. quartered the sugar. or perhaps used less pectin. because with a packet's worth of low sugar pectin and 2.5 cups sugar. this jelly is a solid. 😐
