✨ Quick & Crispy Parmesan Chicken Fillets – Pure Joy on a Plate! 🥳🍽️
Looking for a fast, delicious dinner that everyone will love? These Parmesan Chicken Fillets are crispy, cheesy, and packed with flavor. Ready in under 30 minutes!
🥩 Ingredients:
2 large chicken breasts (cut into fillets)
50 g breadcrumbs
100 g grated Parmesan cheese
1 egg
2 tablespoons flour
Salt & pepper
Olive oil (for cooking)
🔥 Instructions:
Preheat your oven to 200°C (390°F).
In one bowl, beat the egg with salt and pepper.
In another bowl, mix the breadcrumbs with grated Parmesan.
Coat the chicken: dip in flour, then egg, then the Parmesan mix.
Place fillets on a baking tray and drizzle with olive oil.
Bake for 20–25 minutes, until golden and crispy!

1 whole wheat flour tortilla -  check for no added sugar 1/2 c. pecans or walnuts, chopped 1/2 tart flavorful apple, cored, cut into ribbon thin slices 2 T. cream cheese 2 - 3 dashes cinnamon
Spread cream cheese over entire flour tortilla. Sprinkle nuts on one side of the tortilla. Dash the cinnamon. Place the apples on the pecan side of the cream cheese.  Begin to wrap starting with the nuts side first using the cream cheese only side to seal the deal.

Chicken Corn Soup
Ingredients:
(just use the amount that you have)
chicken (or other ground meat - about 3 ounces)
corn (canned, can blend to make creamy)
2 eggs
chicken broth (2 cups)
water
Garnishes:
green onion
cilantro
sesame oil
white pepper
chili / chili oil
Instructions:
Marinate chicken with 1/2 tsp salt, 1/2 tsp shaoxing rice wine, a pinch of baking soda, and 1/2 tsp white pepper. Can also use sesame oil and/or soy sauce.
Add veggies
Add chicken broth. Boil.
Garnish with white pepper, soy sauce, sesame oil, cilantro, and green onions.
07/16/2024 - I used ground turkey because that's what I had, but it's equally as flavorless as some other recipes that used chicken breast. This can also be done with rotisserie chicken. I also threw in some carrots because I had some extra but this can be omitted.

What are you looking to do? Up your protein intake? Lower your calories? Just do better for yourself? That's what I'm looking for on all those fronts.
Choosing yogurt over sour cream will achieve all those goals. The same quantity (2/3 c.) of yogurt vs. sour cream gives the following benefit - yogurt 17 gr protein vs. sour cream with 10 gr, yogurt 100 calories vs. sour cream 600 calories. My numbers came from off the containers. It works to exchange yogurt for sour cream in your recipes. Check out the recipe below...see what you think...
1 envelope Uncle Dan's Ranch Dressing
1/2 pt. yogurt
1 1/2 c. buttermilk
1 T. chives, use kitchen scissors to speed the process
1 t. lemon juice
1 t. white vinegar
2 c. seashell macaroni, whole wheat or garbanzo bean, cooked, rinsed in cold water to cool down
2 c. cherry tomatoes
1 c. cucumbers, peeled, rough cubed
1 c. celery, sliced thin
1 c. carrots, sliced thin
1 c. almonds, sliced
In a small mixing bowl add Uncle Dan's, yogurt, buttermilk, chives, lemon juice, and vinegar using a hand whisk to mix well. In a large mixing bowl add macaroni, tomatoes, cucumbers, celery, carrots, and almonds. Pour dressing overall, tossing well to coat. This is great served on a bed of chopped greens as the main dish or as a side dish with roast chicken and corn on the cob.

Healthy Recipe: Mexican-Inspired Stuffed Sweet Potatoes 🌮💚
Looking for a wholesome, flavor-packed meal? These Mexican-style stuffed sweet potatoes are hearty, nourishing, and bursting with vibrant spices — perfect for a balanced lunch or dinner!
Ingredients:
2 large sweet potatoes
400g cooked, shredded chicken
1 can black beans (rinsed)
1 cup corn
1 tsp cumin
1 tsp smoked paprika
150g shredded cheese
Salsa, for topping
Fresh cilantro, for garnish
Instructions:
Preheat the oven to 200°C (390°F). For quicker prep, microwave the sweet potatoes for 10 minutes until tender.
Once soft, cut them in half and scoop out some of the flesh to create space for the filling.
In a large bowl, mix the shredded chicken, black beans, corn, cumin, and smoked paprika.
Fill each sweet potato half with the mixture and top with shredded cheese.
Bake for 20 minutes until the cheese is golden and bubbly.
Top with your favorite salsa and garnish with fresh cilantro for a pop of freshness.
Nutritional Info (per serving): 🥗 450 calories | 25g protein | 12g fat
