people on tumblr will literally post things like “you have to eat vegetables and expand your palate i dont care if you are a picky eater because of autism (if i can overcome it you can too)” and everybody will reblog it being like “yes this is true for everybody no matter what” and think its okay. like sorry but that wont work for everyone and there is no one size fits all and some people will never be able to eat these things no matter how hard they try. im only allowed by my doctors to eat recreationally and not for nutrition, because my ARFID is so severe that i get my nutrition solely from a specially made formula drink. your suggestions of “try vegetables roasted!” or “try them in soup!” and assurances of “i did it, you can too!” don’t work for those of us with more severe mental illnesses and disabilities. stop tying a person’s worth to their diet and stop assuming everybody has the ability to do what you can.

I’m watching mac and cheese related tiktoks and it’s so funny to me how some people really obsess over the “cheese pull” as a measure of quality, when it’s really just a matter of whether you used a young cheese in a particular dish. when cheese ages, it loses moisture, the casein protein bonds get tighter, etc. massively oversimplifying here, but it Melts Weird.
if you’re a stovetop mac girl who cares none for this instagram bullshit, such as myself, you can just adjust the butter and milk content and be happy.
but if you really NEED that cheese pull, rehydrate a tbsp of gelatin with a tbsp of water. heat up a half cup of evaporated milk, mix in the gelatin, and 12oz of the cheese mixture of your choice . pulverize this with your immersion blender. line a ramekin with plastic wrap, dump this in, cover it, and let it cool in your fridge.
when that’s done, you’ll have a shreddable version of aged cheese that has the velveeta texture you crave. has science gone too far? maybe, but whatever makes you happy.

The tasty tomatillo (Physalis philadelphica) is where we get the English name “tomato”. The tomatillo is a domesticated version of wild plants found in Central America and is known in the Nahuatl language as “tomatl”. This plant is related to tomatoes because it is a member of the Solanaceae family, but it is not a tomato! This fruit grows in a husk that resembles a paper lantern and when it’s ripe the husk splits to reveal the plump green fruit. The tomatillo is the main ingredient of Mexican / Tex Mex salsa verde.
