Note that i don't really have set birthdays for anyone. non-canonically the Mario Bros, Peach, Bowser, Yoshi, Wario and DK would all have the same stone because they were all a batch of star children together, but that's not as fun. Yesyesyes!!! It's mostly capitalism popping off tbh, and it's Very subjective but there are certain stones popularly associated with star signs

So obviously traditionally you have your month represented by a stone, that's a fairly traditional thing,

BUT there are also various stones associated with the zodiac (just as there are stones associated with everything. You don't see it around often because nobody can agree on what they are (due to there being a handful per zodiac sign, it's not a fixed or traditional thing, just witchy associations) 😂

But there's a couple of brands that sell zodiac birthstone jewellery in basically every store locally to me and they both sell basically the same jewellery so I also grew up with those specific associations!
