Frozen Chocolate Monkey Treats - 72 kcal/1g protein

Servings: approx. 18 - 72 kcal/1g protein per treat
3 medium bananas
1 cup dark chocolate chips
2 teaspoons shortening
Optional toppings: Chopped peanuts, toasted sweetened shredded coconut and colored jimmies/sprinkles
Cut each banana crosswise into 6 pieces (about 1 in. thick). Insert a toothpick into each piece; transfer to a waxed paper-lined baking sheet. Freeze until completely firm, about 1 hour.
In a microwave, melt chocolate and shortening; stir until smooth. Dip banana pieces in chocolate mixture; allow excess to drip off. Dip pieces in toppings as desired; return to baking sheet. Freeze at least 30 minutes before serving.

Mabon apple pie recipe
In celebration of Mabon next week, I am sharing my favorite apple pie recipe. I chose to share this a week in advance so that those who want to make it can prepare the ingredients. All ingredients can be plant-based, for those who are vegan the egg is not necessary (you may need to add a little more butter)
Witchy tips during baking:
Mix clockwise and say your intentions for the cake out loud, this could be "I welcome abundance into my life with open arms.", "I embrace the blessings of the harvest and celebrate the abundance it brings." or if you plan to share the pie with friends and family: "May this pie nurture the bonds of love and friendship among us."
When you sprinkle the spices into the cake, do this clockwise and say each correspondence out loud as you do this: Cinnamon: for love, and warmth Cardamom: for attraction and harmony Nutmeg: for prosperity and luck
Carve sigils of choice in the bottom of the pie before adding the filling.
Ingredients For the dough: 500 grams plain flour 1 sachet (15 grams) baking powder 150 grams of white caster sugar 50 grams of light brown caster sugar 150 grams of melted butter 1 egg Pinch of cinnamon, cardamom and nutmeg
For the filling: 1-1.5 kilos of apples 100 grams soaked and patted dry raisins (optional!) 1 tablespoon cinnamon (or more, until all apples are nicely coated)
To brush the dough before it goes into the oven: To give the cake a beautiful golden color, I recommend brushing the cake with 1 beaten egg OR a dash of milk of your choice before putting it in the oven.
Preheat the oven to 190 degrees celcius (374 F)
Peel and cut the apples into wedges, sprinkle with the cinnamon and the raisins that you have pre-soaked and patted dry.
Mix all the ingredients for the dough together until it becomes a crumbly dough (it should be able to stick together and not be too dry, if this is the case I recommend adding more butter to the dough!)
Grease a baking tin with butter or oil and line the bottom with baking paper.
Divide the prepared dough into 3 parts, and put 1 part over the bottom. Press this with your hands or a spoon with a little flour on it so that the dough does not stick.
Then take 1 more part of the divided dough and press it onto the edges around the baking tin. You can roll this out with a rolling pin and cut it to size, I think this takes too long so I just press the dough along the edges (about 0.5 cm thick)
Put the apple filling in the pie and spread it evenly.
Sprinkle the last remaining part of the made dough over the pie to get an apple crumble pie, if you want a lattice top: make a ball of the dough and roll it out with a rolling pin. Cut strips from the dough that are 1.5 cm wide and long enough to cover the pie. If you are making a lattice top, brush it with egg OR milk of your choice to give it a nice golden glow. If you have a crumb top this is not necessary.
Bake the pie for 40-50 minutes, but keep an eye on the pie because every oven is different! You know the pie is ready when you insert a toothpick or skewer into it and the apples can be pierced and the dough does not remain wet around the stick.
Let the pie cool down for fifteen minutes before removing it from the baking tin.

16 Plant-Based Protein Sources
Protein is often raised as a concern for people considering adopting a plant-based diet, and considering the fact that we've all been taught to associate protein primarily with red meat, this is not surprising.
It is estimated that most adults require 56 grams of protein per day, and you're probably hitting that number if you're not in a calorie deficit. If you're trying to lose weight and so are cutting calories then you may need to track your protein a little more closely, but 56 grams is pretty easy to hit without having to really think about it.
It gets a bit more difficult if you're very physically active, particularly if you're engaged in regular endurance training or are trying to build muscle. There is a great deal of disagreement about precisely how much protein is ideal if you're training intensely, but it is very achievable to hit even the upper end of protein requirement estimates using only plant-based foods. Listed below are particularly good options.

1) Lentils - Lentils are a cheap nutritional powerhouse, and provides about 17 grams of protein per cup. They're also very flexible, you can have them as your main protein source of a meal, use them to substitute mince in a pasta dish, make burgers out of them, or put them in a stir fry or with rice and veg with some seasonings. They are cheap and convenient if you buy them canned, since they're ready to eat, though I would recommend at least warming them up.
2) Chickpeas - Chickpeas are a popular vegan staple, and it's not hard to see why. At approximately 14.5 grams of protein per cup, they're nutrient dense and very flexible. Use them to make hummus or falafel, as the main protein source of a curry, on their own with rice or worked into a salad. You can also just air fry/grill them with some oil and spices for a convenient, crunchy snack.
3) Oats - A cup of dry oats is around 11 grams of protein by itself. Making it with a cup of oat milk brings that up to 14 grams, throw in a tablespoon of peanut butter and you're up to about 17.5 grams at breakfast, and all those ingredients are pretty cheap and very filling. You could add something like nuts or chia seeds as a topping to stretch that to well over 20 grams.
4) Nuts - Peanuts are 9.5 grams per 1/4 cup, almonds are 7g, pistachios 6g, cashews 5g, hazelnuts 5g, brazil nuts 4.75g, walnuts 4.5g and pine nuts are 4.5g. You can buy 1kg bags of mixed nuts for a little bit cheaper and keep them in a jar for a healthy snack. I find it better to buy a bag that doesn't have peanuts in then add the peanuts later, as mixes that include peanuts tend to be less for your money. Peanut butter is also a cost effective way to add protein to many snacks and meals.
5) Beans - Depending on the type, beans are anything from around 10-15 grams of protein per cup. Some are better than others, like kidney beans, but even your standard baked beans are high protein and good for you. Turn them into a chilli, have them on toast, on a jacket potato, turn them into a bean burger or make them the protein base of a salad or soup. Kidney , soy and edamame beans are particularly good options.
6) Seitan - When cooked, seitan closely resembles to look and feel of red meat. It is made of wheat gluten and has 25 grams of protein per 100 gram serving. It is not very widely available in supermarkets, but try your local Asian market, where it will usually be cheaper as well. It's a bit of a hassle, but you can also make your own at home, which is extremely cheap as it's just wheat gluten, yeast, plant milk, miso and spices.
7) Tofu/Tempeh - A staple in Asian cooking, don't be afraid to try this one. Think of it as doing all the same things chicken does in terms of recipes, it soaks up the flavour around it. It needs to be pressed before use, or you can avoid that by just draining the liquid and freezing it, then thawing over night when you want to use it. 100 grams of tofu (less than half a small block) contains 8 grams of protein. Some tofu, like Naked TooFoo, is pre-pressed for you.
8) Faux Meats - Faux meats are an easy way to add a protein base to your meal, and has the advantage of serving the same function on a plate as the foods you were used to before you went vegan. A Beyond burger, for example, has 19g of protien per patty, though you can get much cheaper options that have a similar nutritional profile. Pair that with a wholemeal bun and something like brown rice/quinoa and vegetables and you can create a very high protein meal.
9) Grains - All grains are good for protein, these include quinoa, spelt, brown/wild rice, teff, amaranth and sorghum. They can range anywhere between 5 and 8 grams per 100 grams, and you'll usually be serving them with some sort of protein source. They're also an excellent source of fibre and carbohydrates, which are also important for training and general health. Quinoa in particular provides all 22 essential amino acids.
10) Peas - Green peas are not mentioned much when it comes to high protein options, but a cup of cooked peas is a respectable 9 grams of protein, and it's worth mentioning here because they tend to be used more as a side than main, so can be paired with other high protein options. They're also very cheap, freeze well and are easy to prepare.
11) Seeds - Just a tablespoon of chia seeds is nearly 3 grams of protein, and the seeds are so small and tasteless that you don't actually notice them in anything you put them in, making them an easy way to add protein to just about any meal. They're pretty cheap to buy in large quantities, particularly good to replace eggs in baking, to add to bread flour, salads and oatmeal. Other high protein seeds include pumpkin, sunflower, linseed, hempseeds and buckwheat.
12) Bread - Bread may not immediately come to mind when you're thinking about protein, but wholegrain/rye/spelt breads can be very high in protein, anywhere from 3 all the way up to around 10 grams per slice, particularly for seeded loaves. If you really want to turn bread into a high protein food, invest in a bread maker or bake it yourself, that way you can add nuts, seeds and oats yourself to up the nutritional value. That's just the bread too, a hummus and falafel sandwich with a high protein bread can be very nutrionally dense.
13) Fruit and veg - Worth mentioning here, as they're something you'll need to consume to maintain a healthy diet anyway, and some options have moderate protein. The higher protein options include broccoli, spinach, asparagus, artichokes, potatoes, sweet potatoes and Brussels sprouts, which all contain 4–5 grams of protein per cooked cup. Likewise, blueberries, guava, bananas and nectarines contain about 2-4 grams of protein per cup, as well as many other vitamins important for training.
14) Nutritional Yeast - No vegan list is complete without mentioning it, it's a vegan staple for its nutty, cheesy flavour, as well as being an easy source of vitamin B12. It's a complete protein that has 8 grams of protein per 16 grams serving, making it an easy way to add more protein to things like pizza, pasta dishes or a jacket potato. Use it to make cheesy sauces, or just sprinkle it on anything you'd have previousy added parmesan cheese to.
15) Protein Bars - They tend to be  on the expensive side, but there are a few plant-based options. I'd recommend Misfit bars if you can get them online, they're low sugar, 15g of protein per bar, and you can buy them in variety packs of 40 which works out cheaper. Trek also have protein flapjack bars, less protein (8-9g) but are much cheaper in packs of 3 and frequently available at a discount (as little at 85p for three in Heron here in the UK).
Most brands won’t be suitable as a daily option for many people given the price, but great for when you're need a protein boost on the go. You can also just make your own protein bars using nothing but oats, cinnamon, baking soda, a little maple/golden syrup and a scoop of plant-based protein powder.
16) Protein/Meal Powders- Even the cheaper powders are around 18g of protein per scoop, so a shake is an easy way to add more protein to your diet, or you can stir it into oatmeal to get most of your daily requirements over breakfast. Some meal replacement shakes, like Huel Black, are around 40 grams of protein per serving (2 scoops) even when made with just water, providing a cheap and easy way to have a high protein and nutritious meal without any prep or fuss. I've been having a lot of feelings about the cultural aspects of food recently. Usually, this is a topic that makes me angry because my food allergies and intolerances keep me from participating in a lot of it, but I've had a lot of more positive - if bittersweet - experiences lately.
My grandfather died of cancer just over a month ago. It doesn't feel like it's been that long - I still catch myself talking about him like he's here. But when he got the diagnosis, my sibling and I made cinnamon rolls using his mom's recipe - my great-grandma's. This is The Iconic Dessert in my family. Great-grandma Gladys was a restaurant owner and fantastic cook, and many of her recipes have outlived her by decades already, but this is everyone's favorite. Normally I make it gluten-free and vegan to accommodate various family members' dietary restrictions, but this was 100% traditional, as close to how his mom would've made it as we could manage.
It's been nearly two weeks since the funeral and I'm still eating leftovers. In Midwestern culture - and many others - when shit hits the fan, you bring food. Right after he died, everyone was bringing food to my grandma. More than she could eat, and it was a little overwhelming, but I still find the gesture sweet. Because that's just what we do in our culture. Someone dies, and we make food. So the grieving family doesn't have to. To keep our hands and minds busy. Because we have to find some way to express all the love and pain we're feeling - and so we make food. Or buy food, nowadays - my cousins showed up unannounced with Kentucky Fried Chicken, which I previously could not have imagined my grandmother eating. (She has a home economics degree and the closest she normally comes to eating fast food is Chipotle.) Desperate times and desperate measures, I guess?
One of the fondest memories I have of my grandpa during the last few months of his life is watching him eat the apple pie I made him, with apples off the tree in my backyard. I wasn't expecting to find apples there, it was July and unseasonably early for them, but then this tree has always been a bit odd. I picked the biggest, least buggy apples I could find and then spent hours cutting them up and painstakingly carving worms out of them. It was honestly pretty gross, but there is nothing I would have rather been doing. He didn't have much of an appetite by then, but he did eat the pie with more enthusiasm than anything else in those days. My dad took a photo of him eating a slice of it and it's the last one I have of him - I treasure that photo. It was the last time I saw him alive, and the last thing I said to him was 'see ya.' None of us thought we were out of time, but if we had to be, that's a pretty damn good last memory.

I made a post about having random headcanons or au's for characters in books, shows, movies, etc. These are sometimes based on a little truth or sometimes 100% unrelated to the character. I wanted to share a few more! As I did last time, I'll try to provide as much explanation as possible, but sometimes there really isn't any as it's my own fantasy. As it's Pride Month, I'll share a few pride headcanons I have!
-Norway (Hetalia): he's a vegetarian (or vegan) (I have no reason for this hc, it just came to me one day and I thought it would be interesting if the other nordics struggled to comprehend Norway not eating meat, eggs, or dairy with them at the dinner table at first, then getting used to it and learning more vegetarian and vegan recipes)
-Piper McLean (The Percy Jackson series): she knows a lot about cars and is very interested in them. She enjoys watching NASCAR (There's not really much reason for this hc; all I can think of is her being a tomboy and stealing a BMW with her Charmspeak; maybe stealing a car made her realize how much she likes them; everyone at Camp Half-Blood, especially the new younger kids, think she's really cool for it; her girlfriend loves it 😏)
-Henry Winter (The Secret History): is so deep in his Dark Academia Lifestyle that he forces himself to do things he doesn't like just because he thinks it looks cool (I can specifically imagine him being far too stubborn to get electric lights for his home and only using his lanterns and candles because of the aesthetic, even though the low yellow lighting ruins his eyes and gives him even more headaches)
-Ponyboy Curtis and Johnny Cade (The Outsiders): they kissed once while in the abandoned church and vowed to never speak of it again (mostly based on the way they interact in the movie - Johnny getting Pony a copy of Gone With the Wind, them watching the sunset like they're in a romance film, snuggling in the church; they probably felt flustered and embarassed about it; I realized I wasn't the only one who thought they looked a little fruity together when I watched clips and read the comments 💀)
-Tori Vega and Jade West (Victorious): Jade hated Tori in the beginning because of jealousy, then grew to like her and become attracted to her, and Tori shares the same feelings (Jade subconsciously tries to test Tori to see if she can handle her, but Tori is tough; Tori also admires Jade and stands up to her, while also caring about her; despite them bickering, Tori is almost always willing to help Jade; they have some soft moments in the show; NickRewind even made a video about Tori and Jade being a good couple)
-Scipio Massimo/Fortunato (The Thief Lord): He is attracted to boys (I actually have this backed up! Cornelia Funke (the author) had responded to a tweet: a fan asked if, hypothetically, Scipio had a girlfriend, how would she be like, and Cornelia answered "I think he would fall in love with a boy"! So maybe this could be considered canon? Even though it's not in the book? You can find this tweet if you scroll for a while on Cornelia Funke's Twitter; I had this hc before I saw the tweet, and I don't have any reason for it)

Rethinking strategy.
Last week, I had just an apple for lunch every day. it made me very sluggish, kinda cranky, and not very productive. As much as I am committed to losing, this is not the way. Like that amazing post said: "Let's normalize being smart about this."
I'm embracing my brazilian side, but changing a few things, this recipe is the low c4l version of Baião de Dois (I'll translate the name as "a dance for two"), a traditional dish from Brazil that I will 100% be demonized by other non 3d Brazilians for dessecrating.
This version is vegan, GF, and it takes 2 main ingredients that are full of fiber, iron, and a full aminoacid profile.
This recipe makes 4 3d portions, or 2 regular ones iykyk
1 can of beans (I used red kidney beans cus they are my favorite, but brown or black beans are traditional and I'm sure other work as well) with the bean juice!!! 420g - 323 c@ls
1/2 cup rice (I used brown, you can use whatever you want) about 110g dry - 387
Water. Very much depends on how juicy your can of beans is. I used in total about 4 cups, but if you have a pan with a lid, you'll probably need a lot less. Start with 1 cup and keep an eye on it.
Seasonings. (Traditionally onions, garlic, and some type of cured meat. I omitted the meat and used only powder Seasonings for a lower c4l approach, but Seasonings are life and you do you boo) don't skimp on the smoked paprika that will give the traditional smokey taste of the cured meat or bacon with no added c4ls.
That is it. Trow everything on a pot, stir occasionally, and add water as needed. When the rice is cooked and the texture resembles a dry risotto, you're done.
Divide in 4 portions and eat one, and let the others cool completely at room temperature before storing in the fridge or freezer. Lasts like 4 days in the fridge, and idk, like a month in the freezer.
178 c4ls per portion if you divide in 4. It has 10 grams of fiber and 9 grams of protein

Day 42: Low-FODMAP Gluten-Free Strawberry-Custard Pie

This recipe came together because another recipe completely fell apart. I tried to make these graham-cracker waffle things for a whole s'mores situation, but, turns out, baked goods made from gluten-free flour completely lack coherence, and I couldn't get them out of the waffle iron intact. So instead of graham-cracker waffles, I had graham cracker crumbs. So let's turn that frown upside down and make pie with a graham-cracker crust!

Low-FODMAP Gluten-Free Strawberry-Custard Pie
Ersatz Graham Cracker Crust
1 c gluten-free flour
1/4 c brown sugar
1/2 tsp baking soda
pinch of salt and cinnamon
4 tbsp melted lactose-free butter
2 tbsp lactose-free milk
1/4 c maple syrup
1 tbsp vanilla extract
For the crust: 6 tbsp melted lactose-free butter
Mix together the dry ingredients into a bowl, then pour in the wet ingredients except for the 6 tbsp of melted butter for the crust. Stir until a dough forms, and let sit for 5 minutes. You could either pour this into a waffle iron or pan fry them like pancakes, cooking until the waffle/cakes have a nice brown crust. Let cool for a bit, then break up and pulse in a food processor until crumby. You should have about 1 1/2 c crumbs.
Melt 6 tbsp lactose free butter, and mix with the crumbs. Press into a deep dish pie pan while still warm, and put into fridge to set up. Meanwhile, make:

Vegan Custard
1 1/2 c plant milk such as almond or oat
2/3 c coconut milk
1/2 c cornstarch
1/3 c sugar
1 tsp vanilla extract
1/8 tsp turmeric
Off-heat, mix together everything but the turmeric in a sauce pan; whisk out the lumps. Over medium heat, cook stirring constantly until the custard thickens, 2-5 minutes. Turn off heat and keep stirring for another minute to keep it from clumping.
Let it cool for 5-10 minutes, then stir in the turmeric (which is for color, because the pudding is otherwise an unpleasant gray.) Spread custard over the graham cracker crust, and put back in the fridge. Meanwhile, make:

Strawberry Pie Glaze
1 pkg strawberry flavored Junket Danish Dessert
1 3/4 c water
1 lb strawberries, hulled and cut into quarters
Mix the Junket packet with the water, and cook over medium heat until boiling, stirring often. Boil for 1 minute, stirring constantly. Let cool for 10-15 minutes. Arrange strawberries in an even layer over the custard, then pour the pie glaze over the strawberries. Put back in the fridge to set up.
Once the pie sets up, serve with vegan whipped cream.

So this whole project was ridiculous from beginning to end, but the results were pretty good! I liked the plant-milk custard, especially the hint of coconut from the coconut milk. I thought it paired well with the fruit, which was the sweetest thing in the pie. I like my pies not very sweet, so that was perfect. I could have used less butter in the graham cracker crust because it ended up being a little hard. It could also use a little ginger and cinnamon in the ersatz graham cracker crumbs. But really, no complaints.
Even though there was some dairy in the crust -- a little milk and some butter -- I decided I was going to make the filling vegan? Honestly, I have no idea why I committed to that, but you could easily make this recipe 100% vegan by using shortening and a plant milk in the crust instead. I had a bunch of plant milks and vegan whipped cream to use up, so that was that.
I'm not sure how widely available Junket Danish Dessert is. My Scandinavian grandparents used it often as both pie glaze and as a pudding. I've always used it as a vegetarian option instead of Jello, because Junket is thickened with tapioca starch not gelatin. In fact, you can usually find Junket by the Jello in the grocery store.
So! Pretty silly, but a pleasant way to spend an afternoon.
