Cold Soba Salad -- 4 Stars

Gluten free - yes

It's starting! It's so exciting to start with something new. We have a lot of great recipes coming up in this book, and unlike last time, I think i'll keep the table of contents a surprise.

This cold soba salad is tossed with grilled peppers, cucumbers, mint and cilantro, as well as a delicious dressing that I am absolutely going to use on everything. It's packed with flavor, strong in both sweet and savory, making it a fantastic starter.

It serves 8 for several small servings, or you can make a meal out of it and divide it in two. However, boyfriend wants it to be known that the flavor is so strong and singular that it feels way more like a small appetizer rather than a meal. His only complaint was that he got used to the flavor too quickly and it felt one-note to him, causing him to get tired of it before he'd finished. (I devoured mine, so your milage may vary.)

Ingredients for the dressing:

1/4 cup rice wine vinegar

1 tbsp sugar

1 tsp salt

2 tbsp white miso

1 hot red chile, finely minced, or more to taste

2 tbsp dark sesame oil

Ingredients for the salad:

one 8.8 oz package soba noodles

4 oz shishito peppers (if they're not in season, substitute cubanelle or poblano peppers)

1/2 cucumber, peeled, seeded, and thinly sliced on the bias into 1/4 inch half moons

2 cups strawberries, hulled and halved (about 1/2 pound whole)

2 scallions, thinly sliced

1/4 cup mint, roughly chopped

1/4 cup cilantro, roughly chopped

Make the dressing: Stir the rice vinegar, sugar and salt together until the sugar and salt have dissolved. Add the miso, chile and sesame oil, whisk to combine. Set aside.

Cook the noodles according to package directions. Drain and rinse with cool water. Drain well. Toss the noodles with the dressing.

Grill the shishito peppers on a grill or grill pan or in a cast iron skillet until they're blistered and softened, about 2 to 3 minutes a side. Let them cool, then slice onto a bias and discard the seeds.

Top the dressed noodles with the grilled peppers, cucumbers, strawberries, scallions, mint and cilantro. Mix gently to combine and serve.

it's in so much media. i've read so many books that were recommended to me that are good in most all aspects except for the way fat characters are treated. we fatties always jiggle, waddle, wobble clumsily like we can't carry our weight. we don't just walk. or run. we're dehumanized. it's hard to feel respected when we're always a joke for existing even in a story not related to fatness.

we sit so bloated and popping out of clothes like muffins and pies haha get it? fat people like food? that's WHY they're fat, right? fat people are like cartoon human balloons. how dare they sit or be present at a meal and EAT! what a GLUTTON! (big ol /s)

not to mention fat characters who are just jokes or are more prone to being Evil/fucking up because the author decided that it's another innate trait of fat people. lazy, gluttenous, smelly, creepy, evil, weak willed, dumb.

the hit tumblr lesbian book series, the locked tomb, has a rough section in book 2 re: describing a fat guy, and it doesn't improve until the POV character dislikes the fat character less. but who cares since it's a guy in a lesbian necromancer series, right? (/s) i feel so dehumanized that it feels like no one wants me around, not even sapphic women. i'm still a joke to them!

whenever i notice myself breathing audibly, i feel shame. i try to hide it. i try to hold my breath. is just existing that hard on my body? how many people are staring and judging? why can't i exist without mean glances?

i'm not saying i hate the locked tomb (i was glued to them, i like it), but it's one of many examples where the fatphobia came out of nowhere. plus there's one (maybe?) larger woman who is never called fat but might be just slightly overweight. it still feels othering as a fat bi woman.

don't even get me started on all the fat jokes in parks and rec.

it's easy to say "stop worrying about what people think of you," but thay doesn't ease the pain of seeing fat people's pictures circulated to mock them. the MTG crack guy post horrified me, wondering if anyone would ever candidly embarrass me in the same way. i grew up in a mostly large family. i didn't think it was funny. skinny people can get away with that with less vitriol. but i'm "overreacting" to that because entertainment and having a target to put down is more important than respecting fat people.

all this typed up while slowly eating a free lunch at work. i would have skipped lunch if not for the free food since i cannot buy food or use a fridge within my work building without going out of my way. i feel crazy for wanting to eat at around noon. that's supposed to be a normal human need. i'm that fucking anxious about being seen eating. (and work being stressful for other reasons has made it much worse)

like. if you cannot respect fat people, don't bother talking to me.

In the book it's called "Caffeine Control" so what exactly is idk, I think it's a mocha cream frappuccino? A variant of mocha that's for sure (it has black cocoa powder and espresso powder as optional). Also he uses coconut milk and honey. So it's V and GF (vegetarian and Glutten Free)
