The original Zucchini Curry recipe adored by thousands! 12 simple ingredients are all you need to transform boring zucchini into this flavorful Indian & Pakistani-style Zucchini (Courgette) Curry, called Toriyan or ‘torai ki sabzi’ in Urdu. Add the ginger, garlic and chilli and fry on a low heat for another two minutes.
Add the slices and fry for another two minutes.
Add the peppers and mix well. Fry for another five minutes, still on a low heat.
Add the tomatoes, chickpeas, tomato purée and just enough water to cover the vegetables. Mix well and increase the heat until it’s boiling, then reduce the heat and allow to simmer for ten minutes, stirring occasionally.
Add the spinach, allow it to wilt, and serve.

1/2 a red chilli, deseeded and finely chopped (omit if you like less spice)
Ground spices: 1/2 tbsp Garam masala, 1.5 tsp coriander, 1.5 tsp cumin, 1/2 tbsp curry powder, 1/2 tsp turmeric, 2 tsp smoked paprika, 1/2 tsp cinnamon, pinch salt, pinch black pepper

120g grated fresh tomatoes or canned chopped tomatoes (about half a tin)
