Poise & Progess: Formulating My Meal Plan
Firstly, I am not an expert or dietician or whatever. With the help of Chat GPT I’ve compiled a list of meals and snacks that I can incorporate into a meal plan and that will allow me to reach my fitness/body goals.
I will also mention that I mainly follow a pescatarian diet but I am not entirely strict with it. I find that cutting out meats, not including seafood, works well with my body and digestive system but I don't mind a grilled chicken salad every once in a while.

So, don't know if you remember that anon that read your fic without being in any fandom (GOT and Solo Leveling)
I'm, of course, a Sung Jinwoo kinnie, his simp, he's my babygirl and I love him, so of course I read it even if I don't like GOT (too much dead, and I always choose the ones fated to die, one season was enough to understand that I was better far away from them)
But I have to admit that half of the time I'm lost with Jinwoo.

Of course Jinwoo is lost, I'm lost half of the time, and I know what is happening so yeah
Jinwoo isn't just a himbo (he is, but that's not the problem here) that doesn't understand the situation, it's just we need a lot of knowledge to understand how they say hello

been a while since i made one of these and ppl seemed to enjoy them, but here are my cooking endeavors this week:
- made a couple of easy weekday pasta dishes w pesto (finding it tough to go back to the jarred stuff after a streak of making my own). i made 2 different ones w varying things, crumbles of goat cheese or bacon or broccoli or slivers of asparagus or buttered oyster mushrooms or lemon, generally whatever green-ish thing that was looking sad in the fridge
- had a couple of sort of tasty but mostly sad fried fish sandwiches from frozen cod filets i had purchased on accident. used my favorite pickle chips and kewpie mayo and soft white burger buns, pretty much every other element was better than the fish itself which made for a not very delicious dinner but one that got the job done lol
- a plush vanilla layer cake w blackberries swirled into the batter and topped w a vibrant homemade lemon curd and clouds of whipped cream mascarpone frosting and deep purple sugared smashed blackberries and their juices. stained my fingers but was sticky and delicious and summery, would have been great for a tea party if i’d had one to go to
- i made 2 discs of pie dough, one i popped in the freezer for a future cherry pie (my gf’s request) and one for a gruyère, spinach, sausage quiche im making for dinner tonight bc i have an abundance of eggs and a deep love of breakfast food
- i prepped a chicken for roasting tomorrow, it’s now resting uncovered and spatchcocked in my fridge, coated thickly w a rotisserie inspired blend of spices to dry brine. i boiled some waxy yellow potatoes to make it easier to roast them w the chicken tomorrow when i get home from work . simple + easy for my future tired self
- will also be making a cucumber salad to go with the potatoes and chicken bc we have 8 cucumbers (not an exaggeration) to work through and i need a cold crunchy vegetable to eat every day in the warm months or else i shrivel up and die
- planning to use my leftover roast chicken to make either a caesar salad or a caesar salad wrap or something for dinner the day after tomorrow, something easy to make after a long day at work and tbh very little brings me more joy than homemade caesar dressing and cold romaine
- busted out the ice cream maker !! have plans to make both a pineapple sorbet and a toasted coconut vanilla ice cream (sweetened w condensed milk maybe? for the nuttiness?) so then i can swirl the two flavors together in my little bowl :)

What would be an ideal feast/stuffing for you?
OoooOOoohh such a good question!!
So, let's get this out of the way first. There are certain qualities to an ideal eating experience for me:
1. I need some level of variety of different kinds of foods and tastes as I can get tired of certain flavors sometimes and need a new one to keep going
2. I'm very plain when it comes to foods. I love sauces and seasonings, but I'm not usually a fan of mixing foods past something like a starch and a meat in the same bite. I always clean my plate. I just eat everything separately, so any dish that lets me do that is preferred
3. It needs to be possible to make a large quantity of it with bonus points if it expands in your stomach like rice (shocker, I know lmao).
With that in mind I think my ideal feast (and I'm gonna go into detail here) would be a huge multi-course meal a bunch of meats, veggies, and carbs.
Course 1: Salad and bread 🥗🥖🫃
The bread just regular baked bread you'd get at a restaurant. The salad huge with a mix of spinach and arugula topped with carrots, cucumbers, croutons, and a *ton* of ranch and cheddar cheese
Course 2: Pasta Dish 🍝🍗🥦🫃
I regularly make this dish for Lee and I because I grew up with it, and we both love it! What I do is boil some pasta (usually angel hair, spaghetti, or egg noodles), dice up a container of chicken and sauté that as well as some broccoli with lemon juice, garlic, this Garlic Herb and Wine seasoning from Mccormick, and just a bit of salt and then I mix the sautéed meat and veggies with the noodles to get the seasoning all over the pasta as well. It's absolutely to die for, and I could eat it forever, so it has to be a part of my ideal feast.
Course 3: Steak Dinner 🍖🫃
This is probably a basic American thought process, but whenever I think about getting to eat anything I want with no consequence, a big steak is always what comes to mind. Any kind is fine for me, so let's just say a medium rare sirloin that is at an absolute minimum 16oz. Then I'd have grilled/seasoned asparagus and a bowl of mashed potatoes on the side. It's simple but very tasty.
Final Course: Dessert 🎂🫃
This is the most free form part of the feast. Unlike Lee, I absolutely *love* sweets and can absolutely destroy huge amounts of sweet stuff. It could be a big ice cream sundae, a birthday cake, brownies, cookies, banana bread, pumpkin pie, anything. If it's sweet and baked, I won't be able to resist it. Call me Ego from Ratatouille cause my answer is: Surprise me!
By the end of this meal I'm sure I won't be able to move for at least a day, so please make sure rub and take care of my poor overworked tummy once it's all slowly turning into fat inside me...🫃🐷💕

like the meals you regularly cook a few times in a month, for yourself or your family as well
bc for me it's like
bacon sandwiches. basic.
garlic bread
baked feta with peppers & tomatoes, oregano, olive oil, a bit of lemon juice
the lidl potato gratin with peppers, tomatoes, and spinach mixed in, again normally with olive oil and some cheese
roast chicken with roasted potatoes and root vegetables, normally carrots and parsnips
pork souvlakia, chunks of usually belly pork or chop on kebab sticks and oven grilled with or without chunks of pepper and tomato
dolmades, vine leaves stuffed with stewed rice
chicken risotto made with chicken stock on a base of butter with spring onions and bacon to toast the rice with
pasta with chicken pieces with a tomato-based sauce w more cheese and vegetables
a "greek salad" with some modifications - chunks of cucumber, tomato, red and yellow pepper, spinach leaves, red onion or spring onions, garlic granules, and then olive oil and feta chunks
parchment pastry scrolls, a spread of pastry smeared with tomato purée or similar chutney, cheese, bacon, vegetables, or mushrooms, and then cut into discs and baked
homemade burgers with beef or lamb mince, tiny chopped onions, egg, honey as a binding agent, and then fried hopefully to eat with slices of cheddar or leerdammer, bacon, and pickles/cornichons
i made a kouneli stifado a while back (whole rabbit cut into chunks, slow cooked with potatoes and root vegetables, onions, red wine, stock, etc) that i want to do more regularly bc a whole rabbit is a fiver and it feeds a LOT of people
then obvs like. various oven cooked things i don't modify, like prawn tempura or frozen calamari, etc
because i've moved and haven't set up my rice cooker or got my short grain rice again, and bc i don't have a new deep fat fryer yet, i'm not cooking like, my fresh cut chips, or maki rolls and onigiri, or a meal i'd regularly do of just like. fried eggs on rice and stuff
i used to make lasagnes more regularly and i'd like to go back to that, esp bc like... i love making latkes and once we have a nice wide frying pan it will be nice to do that more regularly, and my big thing atm is that i want to learn to cook with some new ingredients
i want to learn to do more and more interesting stuff with coconut and pineapple, i want to do more like. kormas and other diff curries, i want more green vegetables, esp asparagus and broccoli
i want to cook more with different fish and sea food bc i know i desperately need the oil for my fucked up joints and brain, i want to break more breads and savoury things, esp garlic and tearaway breads
esp bc like. my body's capacity for red meat is fucking terrible lmao, i want more fibre and less heavy protein from red meat at once so i don't just utterly eviscerate my guts lmao

• Salads are amazing for lunch. They have Vitamin A and C and lots of calcium and fiber for your diet. It’s low in calories and high in volume and fiber which will keep you satisfied longer. Instead of ranch dressing try to switch it out for oil and vinegar.
• lettuce wraps are my all time favorite. instead of using tortillas you can use lettuce to wrap up your proteins and fibers. This alone can help boost your metabolism and is just as good as a regular wrap!
• sushi bowls! white rice isnt necessarily as good for you but still has its perks! try to switch to brown rice if you can. sushi bowls are healthy for you because it has many veggies and high quality protein. fish provides you with the minerals you need (including iron) and can leave you feeling happy afterwards.
• Meats and Veggies! This one is pretty obvious… your lunch could be as simple as some meats and veggies on your plate. Go for chicken, pork, lamb and beef for your meats since they’re rich in protein. green veggies like broccoli, spinach, kale, etc are always a best option for any diet!

• Salmon and asparagus! now i know asparagus can make your urine stink, which is always a downgrade, but it carry’s many nutrients like vitamin C and E. it can also relieve inflammatory conditions and salmon packs many proteins to aid weight loss.

unbelievably easy plant-based meal #2: colorful veggie scramble!
this one was a pandemic-era fave of mine. it’s an incredibly simple way to pack a TON of veggies in one meal (and you can customize it with whatever you have in the fridge). plus you get to feel very smug & virtuous all day because you ate sooooo many veggies for breakfast.
what you need: 4-6 eggs, half an onion, milk or plant-based milk, leafy greens (spinach or kale), and your favorite veggies (I used broccoli, cherry tomatoes, zucchini, and red + orange bell peppers for this one but have used carrots, mushrooms, asparagus, squash, cauliflower, corn… you name it, it’s delicious)
prep work: you gotta small dice the veggies but it’s easy to do the night before. I store the onions, veggies, and leafy greens separately since you’ll add them at different times.
what you do:
heat a dash of olive oil over medium high heat. when it’s sizzling toss in the diced onions, salt + pepper them, and cook 2-3 minutes until they start to soften.
add the veggie mix except the leafy greens. salt + pepper, then cook for 4-6 minutes or until softened. when the timer goes off add giant handfuls of greens (they cook down so much so you can add TONS) and cook for two more minutes or until the greens have wilted.
WHILE THE VEGGIES COOK: whisk your eggs in a bowl and add a dash of milk or water. once the spinach has wilted, pour the egg mixture into the bowl. salt + pepper again. let the eggs sit for a minute until they’ve started to set, then start gently folding in the edges to scramble the eggs a bit. this happens fast since the pan is so hot—usually the egg step takes 3-4 minutes max.
remove from heat and let sit for a minute (it’ll keep cooking a bit more. then serve with any garnishes or sauces you like (I usually do hot sauce). the leftovers will stay good in the fridge for about four days.
enjoy!!!
portion sizes: eat as much food as you want! but if you want to size your portions, I find 1 heaping cup of egg scramble (usually paired with a big handful of blueberries) fills me up, since the veggies have tons of fiber + the eggs have a lot of protein. but this is a good one to eat more of if you’re still hungry after your first bowl since it’s mostly veggies.
total time: 10 min to dice the veggies (can be prepped in advance), 10ish min to cook the veggies + eggs, and under 5 min to clean up if you put stuff away as you go.
fun additions:
literally any veggie works and it’s fun to try different combos. I try to make it as colorful as I can because it’s so pretty.
to get more protein: add white beans or tofu (or even substituting extra firm tofu for the eggs to make a tofu scramble).
to add whole grains (fiber + lower glycemic index value—good for PCOS): add a slice of whole wheat toast or make it a breakfast burrito by wrapping your scramble in a whole-wheat tortilla and adding your favorite salsa.

Hey is it okay if you share more about your sugar free diet? I have a sweet tooth but I'm trying to cut out/lower my sugar intake due to all-but-one of my family having diabetes (I'm the one. For now). I've never tried any kind of diet before so I'm not sure what to expect. If you're not comfortable sharing then don't worry, you can discard this message :)
Sure! So firstly, I'm not going to be one of those people who never consumes sugar, like I don't care if there are small amounts in a sauce or glaze or whatever. I also ideally want to be able to have the occasional treat for special occasions. I kinda try to follow a diabetic lifestyle preemptively, as PCOS puts me at high risk for developing diabetes and my maternal grandparents both have it.
Basically I won't buy anything like candy, cakes, biscuits, etc. If sugar is the whole point of eating a certain food, that food is a no-no. Fruit is the exception, and even then it's a treat and must be whole fruit so I get all the nutrients & fibre - no juice!
Consume plenty of proteins & healthy fats during meals (and snacks if you can)! I'm vegetarian so this has been a challenge, but I've found veggies that work. Stuff like broccoli, cauliflower, spinach, bok choy, green beans, capsicum, avocado, asparagus, zucchini, olives. Fruits with lower sugar content include strawberries, raspberries, blackberries, kiwifruit, oranges, peaches, watermelon, cantaloupe. Nuts and seeds are also great! I still eat carbs like rice, tortillas, occasional chips, etc but the heavier I rely on them, the more likely I'll get sugar cravings, personally. Since it all breaks down to sugar anyway.
Explore your local sugar free options! Unfortunately most sugar free candies are absolute crap imo, but there are treasures hiding among the trash. I don't know where you live but in NZ there's this choc ice cream (Zilch) I love that uses sugar alcohols instead of sugar, which have no effect on blood sugar or insulin levels. Just have to be careful how much you eat tho cause too much sugar alcohol can give you mad toots and tummy issues 😭 There are bound to be options near you that are worth exploring, you just need to be willing to sort through several things before you find something that isn't gross.
I hope this helped at all! I know lowering your sugar intake can be daunting, especially since it's a very real physical dependency for some. Do be prepared for potential withdrawal symptoms if that applies to you. Everyone says they get headaches when coming off sugar, but I didn't lol I got digestive issues for a few weeks. Mood swings too. Its different for everybody! But any issues from reducing sugar are manageable and they are only temporary! I personally felt tons better both physically and mentally than I ever did before once I got past them. You can do this 🌸🌷

Pesto Penne Pasta with Cherry Tomatoes & Spinach (Vegan, with oil)

Pesto penne pasta, vegan style! This is a classic pesto recipe, minus the dairy and expensive pine nuts. I found that walnuts are a great substitution since they're soft, nutty, and add some earthiness to the pesto. The trick for this recipe is to use really good olive oil, since that gives the pesto a lot of flavor. This vegan pesto penne can be enjoyed warm or cold. Make some extra pesto to save for other recipes!
Ingredients:
1 box (16oz) penne pasta (I used whole wheat)
1 container (10oz) of cherry tomatoes
2 garlic cloves
4-5 large handfuls of fresh spinach
Salt & pepper to taste
Pesto Ingredients:
3 large handfuls of fresh basil leaves
1/2 cup extra virgin olive oil
1/3 cup walnuts
1 tbsp nutritional yeast
1 tsp garlic powder
Directions:
Bring a large pot of water to a boil and cook the pasta according to the directions on the box.
Meanwhile, chop your tomatoes and garlic.
Add the tomatoes to a frying pan over medium heat. Add a splash of water so they don't stick to the pan.
Cook the tomatoes for 3-4 minutes, then add in your garlic. Cook for another 2-3 min.
Add all your spinach to the pan and cook until wilted.
Set aside until needed.
While the veggies cook, make your pesto.
Add all the pesto ingredients to a food processor or mini NutriBullet and blend until everything is chopped and combined. ○ If your pesto is looking a little too thick, you can add more olive oil or even a tiny splash of water.
By now your pasta should be done boiling. Drain and place back into the pot.
Add the tomatoes, spinach, and pesto to your pasta.
Mix gently until the pasta is coated evenly.
Serve immediately with a little bit of vegan parmesan or nutritional yeast on top!

You can enjoy this dish hot or cold.
This is a very customizable dish -- add vegan chicken or sausage, asparagus, zucchini, broccoli, or any other veggies you think would go well in here.

Life and Such
I finished my grad program! I AM FREE from academia!! (except for the part where I want to work in academia)
I vanished into the woods last Saturday as a treat to myself, and I had the best time. I sat on a hill overlooking the lake and watched the sun sparkle in brilliant diamonds over deep blue water. I lay on pine needles soft as a bed and read a book, with no sound but the birds and the wind. I wandered alone through tall pines and passed so many vernal pools that spilled out onto the path. I saw a family of geese with fluffy goslings, and I met someone who complimented my Sigur Rós t-shirt (if you’re going to meet someone who compliments your Sigur Rós t-shirt, it’s probably going to be in the middle of the woods). The whole day was just soul-restoring. I hiked nine miles over eight hours and had an amazing time :)
Went for a picnic and a walk around a pond with @eclipsemidnight​ on Sunday, which was very nice (there were swings! and flowers!) and then I went to another pond after work one day and got devoured by mosquitos while looking at swans and herons in the reeds across the water
I actually have a lot of friends? Something I periodically re-realize about myself is that underneath the withering social anxiety, I’m actually sort of…social? I like people? I like having lots of friends? I have my close friends from college, a couple friends from my hometown, my roommates, and friends from my grad program, plus there’s a local trans group I go to periodically and a weekly trivia night I go to, and that’s like…a robust social life? On occasion I am overwhelmed by all the social commitments I have? But they’re fun, because I like all these people and want to keep them in my life? Every sentence here ends in a question mark because this is so wildly outside of how I see myself, but compelling evidence indicates that I have many friends and enjoy being social with them. Wow.
I’m just not very ambitious. I like my chosen field, and I’m excited to work in it, but I really just want A Job, any job. Meanwhile my classmates are pursuing high level research instruction positions etc, and…I just don’t really care what I do. I want a job I enjoy that I feel like has some meaning in the world, and I want to do it quietly and well and forget about it when I leave at the end of the day.
My roommate pointed out a while ago that I only eat three vegetables (spinach, brussels sprouts, and broccoli, with an honorable mention to asparagus), and so I’m embarking on a Quest to try a new vegetable every week. This week it was peppers, specifically red bell peppers, which were…decent. At first I just threw them in a pan with some eggs to make some kind of scramble, which was ok, and then I tried olive oil and some herbs, which was…also not delicious, but fine. I’ll eat them again, but I think I need to experiment with method.
Park weather is upon us!!! which means that at every conceivable opportunity I’ve been haring off to patches of trees with a good book and stretching out in the sunlight. The sudden advent of park weather also coincides with the end of school for a) me!! and b) the college whose students always clog up my commute to work, meaning that the structure and texture of my days has improved dramatically
I’m obsessed with Enter Shikari’s new song Jailbreak, which sounds like it’s designed for building up the crowd into a fucking awesome mosh pit, but I dearly wish moshing had weight classes, because while I love running and jumping around and slamming into things, most people in the pit are twice my body weight and that’s not fun dancing/proprioceptive stimming, that’s dangerous. In the meantime I’m just throwing myself around my room and annoying the neighbors
I’m trying to have new and varied hobbies, and part of that is spending less time reading books, which is entirely…uh, novel for me. I am very much the kind of person who’s sort of a book first and a human second, and reading is such a default part of my life I don’t even really think of it as a hobby. Historically my instinct is “read!” every time I have even a second of free time. But I want to have other hobbies and do new things! I have never organically wanted this before so it’s a bit bemusing, but I am starting by trying to embroider more and also make some really shitty baby zines.

I will be happy to share! I’ve worked on this and altered more than once to fit the need, but I’ll give you all the goods on this recipe.
I rarely write recipes because I just experiment more than follow a recipe, but I should get the measurements right enough to work @ultimategamernerd
This will be for 4 servings.
Okay so ingredients:
8 oz of uncooked dried pasta - penne is best for this in my opinion but you can use rigatoni or bow and it work just as well
3 tbsp olive oil - divide it because you’ll use a tbsp or 2 at different times
1 lb boneless, skinless chicken cut into 1 to 2 inch strips (or similar in size to whatever pasta you choose)
1 tsp salt
½ tsp pepper
1 red pepper chopped
1 yellow pepper chopped
1 orange pepper chopped
1/2 lb of button mushrooms
2 medium shallots diced (or onions if preferred)
2 cloves fresh garlic minced
2 tbsp balsamic vinegar
1 tbsp lemon juice
2 tbsp fresh or dried parsley
Variations - honestly there’s a lot of ways you can substitute or add veggies in this so it’s all up to your taste buds. Some different things I’ve used in this also include:
Tomatoes - grape or cherry would be awesome
Spinach
Asparagus
Broccoli
Cauliflower
Snow peas
You get the idea. Loads of ways to make this dish yummy for you
Instructions
Cook pasta according to the package directions. After you cooked it, remove like ½ cup or so of the pasta water and set it aside for later. Then drain the pasta and set it to the side.
Meanwhile, in a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chicken to the skillet and cook for roughly 5 to 8 minutes and stir occasionally. You want to cook the chicken until juices run clear and chicken is no longer pink. Sprinkle salt and pepper on the chicken and mix it well.
Add red, yellow, orange peppers, mushrooms, and shallots to skillet. Cook for like 4 to 7 minutes, allowing the peppers and the shallots to brown on the edges. Add the garlic and cook for about another minute longer.
Add the balsamic vinegar, lemon juice, 1 tablespoon olive oil, the ½ cup reserved pasta water, and the cooked pasta to the skillet. Cook for about 3 to 4 minutes, stirring while ingredients come together.
Transfer to a large serving bowl or platter.
Sprinkle with Parmesan cheese and enjoy!

How to Increase Hemoglobin Naturally
There are many different kinds of anemia. Both cancer and the treatment for cancer can cause aplastic anemia, where one’s body cannot make enough red blood cells, white blood cells, platelets, or hemoglobin.  
As mentioned in a previous post, there are natural ways to help increase one’s red blood cell count.  This starts with giving your body the necessary ingredients for red blood cell production, including vitamins B6, B9 (folate), B12, iron, and copper. 
This is also true with hemoglobin. Hemoglobin is a protein found in red blood cells that carries oxygen throughout the body. Oxygen strongly binds to iron, so an increase in iron can raise one’s hemoglobin level. If your hemoglobin is low, it’s a good idea to ask your doctor to test your iron, ferritin (stored iron), TIBC (total iron binding capacity), and iron saturation levels in order to determine exactly how much iron you need. As a functional medicine doctor, my target lab values for each are as follows:
Iron - 100 Ferritin - 100 TIBC - 350 Iron Saturation - 35-40%
Too much iron can cause toxicity in the body so it’s important to have your levels checked before starting on an iron supplement. Also, some iron supplements can cause GI upset, nausea, and constipation. Here’s one I use in my practice that I strongly recommend. It's highly absorbable and (generally) does not have any side effects, Thore Ferrasorb (Iron).  
In addition, here is a list of foods that are high in iron. 
Red meat (beef, lamb)
Poultry (chicken, turkey)
Seafood (oysters, clams, tuna, shrimp)
Legumes (lentils, chickpeas, beans)
Dark leafy green vegetables (spinach, kale, escarole, collard greens)
It’s also important to consume foods that are high in vitamin B12, B9 (Folate), and chlorophyll as they help with red blood cell production.

Meat (beef, lamb)
Poultry (chicken, turkey)

Fortified plant-based milk alternatives (like almond, cashew, macadamia, and coconut milk)

Beans (lentil, black bean, kidney bean)
Avocado
Citrus fruits (orange, lemon, lime. Avoid grapefruit as it may interact with medications.)
