Chicken Cacciatora & Butter Bean Mash and Button Champignons

Ingredients:
For Chicken Cacciatora:
4 chicken breasts or thighs
2 tbsp olive oil
1 onion, chopped
2 cloves garlic, minced
1 can (400g) diced tomatoes
1/2 cup chicken broth
1 tsp dried oregano
1 tsp dried basil
Salt and pepper to taste
Chopped fresh parsley for garnish
For Butter Bean Mash:
2 cans (400g each) butter beans, drained and rinsed
2 tbsp butter
2 cloves garlic, minced
Salt and pepper to taste
For Button Champignons:
250g button mushrooms, cleaned and sliced
2 tbsp butter
2 cloves garlic, minced
Salt and pepper to taste
Instructions:
Prepare the Chicken Cacciatora:
Season chicken breasts or thighs with salt and pepper.
Heat olive oil in a large pot over medium heat. Add chicken and cook until browned on both sides. Remove from pot and set aside.
In the same pot add onion and garlic. Cook until softened.
Add diced tomatoes, chicken broth, oregano, and basil. Stir to combine.
Return chicken to the pot . Cover and simmer for about 20-25 minutes, or until chicken is cooked through and tender.
Garnish with chopped parsley before serving.
Make the Butter Bean Mash:
In a saucepan, melt butter over medium heat. Add minced garlic and cook until fragrant.
Add butter beans and mash with a potato masher until desired consistency is reached.
Season with salt and pepper to taste.
Prepare the Button Champignons:
In a separate pan, melt butter over medium heat. Add minced garlic and cook until fragrant.
Add mushrooms and sauté until golden brown and tender adding a bit of paprika .
Season with salt and pepper to taste.
Serve:
Serve the Chicken Cacciatora alongside the Butter Bean Mash and Button Champignons.

140 days of productivity: day 21/140

damn how can someone be productive and still drink the recommended amount of water per day? i'm struggling a lot with this. today i was very productive, very creative and very hardworking, but i drank maybe 1 L of water and thought about work during my entire outdoor walk (which was supposed to be a break to recharge). i'm surprised that even with little sleep, i haven't felt sleepy during the day. i'm in a good mood and happy most of the time. today I basically worked until my eyes hurt (I forgot to turn on the light) and also packed some candle orders.
needless to say i'm absolutely obsessed with baekhyun (sorry sehun... maybe i have a new utt? my inner teenager is screaming) and that i'll only be cured when he releases hello, world. sorry moots, you'll still see me talking about baekhyun — aka king of kpop — for a while...
💥: day 15/29 (probably ovulating since I'm feeling so energetic and alive 👀)
💧: 1 L (which is nothing since it was 36 degrees today)

The Date Game: Olympic Sport or Minefield?

Dating, darling, is it an art or a game? And if it's a game, shouldn't it be an Olympic sport? Just picture it: all the guys I've dated, competing for the gold medal in... well, we'll get to that. But first, let's talk about the rules (or lack thereof).
Every game has rules, right? They make things more fun, more challenging, and help you understand the goal. But dating, my sweet summer children, has ZERO rules. It's like being dropped in the middle of the ocean with a blindfold and a paddleboard.
I have yet to receive a rulebook for the GAME, the game of love. (Is that even what we're playing?)
I don't know about you, but I don't think people go on dates to find love. In my experience, it's more about finding someone who isn't a total nutjob, a psycho, or a cheater (that last one is harder to spot than a fake Rolex).
Gay dating, in particular, is two guys trying to out-impress each other with the same, tired lies. During the date, everyone's Mr. Perfect: zero baggage, amazing exes, no drug problems, mental health? Aced it! Workaholic, but with a heart of gold. It all sounds too good to be true... and honey, it usually is.
Social media is partly to blame. We're all curating our "perfect" lives online, and some people are taking that facade offline. I've met guys who are living their Instagram fantasy IRL, and let me tell you, it's exhausting.
But that's not even the worst part. The thing that really gets me is that dating feels like a never-ending job interview. Think about it:
I apply for the job: Based on my carefully curated profile pics and witty bio.
I'm randomly selected for an interview: If my pics are cute enough and my bio doesn't sound like a serial killer's manifesto.
I go to the interview: AKA the date, where I put on my best performance and hope they don't notice I'm wearing Spanx.
Now, here's where it gets different: If I don't get the job, I'm still open to a little "consolation prize" (if you catch my drift). In the real world, you don't sleep with your HR manager after a failed interview. But in the dating game? Anything goes.
So yes, I downloaded Tinder, took some flattering selfies, and crafted a bio that would make Shakespeare jealous. And you know what? It's been... interesting. Expect a full report in my next post, including tales of awkward Grindr encounters, unexpected hookups, and maybe even a happy ending (or two).
Ps. We're in 2024—can we normalize sex on the first date (or soon after)? Why is this still taboo? Sex is important in any relationship, romantic or otherwise, and it's weird that we don't talk about it more openly. Let's be real, we need to talk about sex, learn about it, and teach it without shame or judgment. This starts with looking inward and seeing our lives (and desires) with fresh eyes. Sex isn't dirty or ugly; it's a natural form of energy and connection. I want to know if the person I'm dating matches my energy in all ways, including sexually.

Hi love! I would say to keep the following in mind:
Have all your materials (portfolio, website, clips, LinkedIn, rate card, etc.) neatly packaged and easy to browse through
Define your USP and core specialties/services. Why would a prospective client hire you specifically? What makes your expertise, experiences, offerings, etc. the perfect fit for their needs?
Have an elevator pitch/intro in every reach out to humanize yourself and share your unique value-add
Tailor every pitch and use it as a chance to position yourself as the solution to their business needs/pain points (this can range from having a niche/specialty that aligns with their needs, such as experience writing tech-focused email copy, or offering them a greater business need like brand awareness to a specific market)
Research, research, research –– about the business/client/contact you're reaching out to, their existing marketing materials/press mentions/social feeds, general knowledge of the industry, etc.
Have an onboarding/workflow process for every project. Be prepared to share a general overview of how you work in a discovery call
Ask for a discovery call at the end of our every reach-out message
Know your rates and turnaround times/rush rates ahead of time
For any discovery call, always be prepared to run the show/ask questions that will help you better understand their needs/business/personalities and work style

Questioning your worth won't ever lead you to find your true value. I get it, some people out there might make you feel like you're not enough. But how you treat yourself matters way more than how others treat you.
Sure, people might throw some hurtful stuff your way, or make you doubt yourself, but don't let that shake your confidence. You're precious, way more than you might think. You're not defined by the scars you hide or the nights you spend feeling down.
You can't force people to see your worth if they're blind to it, but you can always remind yourself that you deserve better. You won't always please everyone, but that doesn't diminish your value as a person.
When you start loving yourself, you'll see that other people's opinions don't matter as much as your own. It's all about what you think of yourself. So, be your own best friend, especially on those tough days when others make you feel small.
Self-love is key. It's what helps you realize your worth, and once you do, no one can knock you down. So, why not start showing yourself some love today? You deserve it, no matter what 🖤

The last few days have been hard, so today I want to start by listing the things that, after spending the whole night crying, made me smile as soon as I saw them:
- a lizard running to lie down in the sun
- two parakeets resting in a tree
- kind people in traffic
- a man on a machine fixing the wiring on a street pole
- a girl taking a picture of her orange soda to post on social media
All of this made me happy for a few seconds. Today I'm feeling really depressed, so seeing life outside of myself is like receiving a tonic of hope and joy.
I've been working and studying a lot, which makes me think that I've never taken a vacation since my first job. Still, there's a lot to do. My generation isn't going to retire and I can't count on someone to support me financially or clean my house for me. Sometimes I miss being younger and having the comfort of living with my parents… my only concern was studying and getting good grades. What a simple life! Now I just feel emotionally, physically and mentally drained all the time lol.
