What if Ezio saw someone who had the potential to be an assassin as they could climb after a break in carrying a bag of gold or jewelry but unfortunately their face was covered up?
If we’re basing this on AC Brotherhood, Ezio would check first where that person had broken into. If it’s a Borgia stronghold or a place connected to the Borgias or his allies, he would complement them and try to recruit that person. But if it’s like some normal citizen’s place, he’d chase that person down to try and get the stolen items. After that, he’d give them the chance to explain themselves and, depending on their explanation, Ezio would offer a chance in the Brotherhood or not.
Even if that person managed to slip away from him, he most probably has enough recruits and contacts to find them. He’d talk to La Volpe about that person as well, hoping La Volpe would know about the masked thief. If the masked thief is not part of La Volpe’s band of thieves then Ezio would have La Volpe’s thieves looking for that person as well because they’re territorial and they will not tolerate any ‘upstarts’.
It would only be a matter of time before the thief is caught because they would have La Volpe’s thieves and Ezio’s recruits keeping an eye on them.
Hell, the chase would probably give them plus points in Ezio’s books and the longer they keep away from Ezio, the more Ezio would be curious about them.
Honestly, it really depends on who the thief targets whenever they steal.
If they steal from the Borgias or the rich in general then Ezio would recruit them.
If not… well… Ezio would listen to why they steal and their fate in Ezio’s hands will depend on their answer.

advice i think we should tell children is that when adults say stuff like ‘now that i’m an adult i get really excited about stuff like coffee tables and bathrooms and rugs etc’ they don’t mean ‘and now i don’t care about blorbo and squimbus from my childhood tv shows anymore’ bc your average adult still loves all the same pop culture stuff they always did; they just have a greater appreciation for the mundane as well. growing up just means you can enjoy life twice as much now. you can get really excited about a new stuffed animal AND about a new kitchen sponge. peace and love
