Keto Carrot Cake
Ingredients:
2 cups shredded carrots
1 cup almond flour
1/2 cup erythritol
4 eggs
1/2 cup coconut oil
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
A pinch of salt
Instructions:
Preheat the oven to 350°F (180°C).
In a bowl, mix together the almond flour, erythritol, baking powder, cinnamon, ginger, and salt.
In another bowl, whisk the eggs with the coconut oil.
Combine the dry ingredients with the wet ingredients, then fold in the shredded carrots.
Pour the batter into a greased cake pan.
Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
Let the cake cool before serving.

Day 1 of doing OMAD and intermittent fasting.
Start Day 1 : 106kg = 233.69lbs

Ahhhh, starting again guys. I will be updating my progress every Saturday morning.
My Goal is to lose 80 pounds in 4 months - I have seen a few girlies on youtube achieve this goal so I will be be doing the same.
TODAY I am on my first 36 hour fast to give me a head start and kick start my Keto process. Fast ends tomorrow (currently on 18,5 hours)
